Kaffir & Coconut Caramel Slice
  1. Place biscuits and Kaffir leaves in a food processor and blend until biscuits are crushed to a crumb.
  2. Add coconut and ginger
  3. Melt butter and condensed milk on low heat stirring regularly until blended.
  4. Add Kaffir lime juice stirring all the time.
  5. Slowly add and stir in processed biscuit mix.
  6. Grease slice tin and press mixture into tin.
  7. Sprinkle with desiccated coconut and bake at 150 degrees C for 45 minutes.
  8. When slightly cool cut into slices and remove from tin to baking rack.
