  1. Preheat oven to 165 degrees. Grease a 23cm loose bottom cake tin.
  2. Beat egg whites in a large bowl until soft peaks form. In a separate bowl, sift icing sugar and flour before adding coconut, almonds and lime zest.
  3. Fold dry ingredients with melted butter into egg whites. Mix well.
  4. Cook 30 minutes. Cool on rack.
  5. Dust with icing sugar and decorate with lime halves and citrus leaves

  1. Beat eggs until creamy, add soft brown sugar and oil and beat together.
  2. Sift dry ingredients and add with Feijoa and grated lime rind to egg mixture folding in until blended.
  3. Grease loft tin or muffin tins and add mixture.
  4. Sprinkle with soft brown sugar, slivered almonds and a small squeeze of lime juice.
  5. Bake at 180 degrees C for 1/2 to 1 hour depending on whether muffins or loaf.
  6. Allow to cool thoroughly before slicing like a loaf.
  7. Serve with Greek Honey Yoghurt.
