Ingredients
- 8 limes juiced
- 1 red onion sliced
- 2 tomatoes diced
- 1 small cucumber slithered
- 1/2 capsicum sliced finely
- 1 1/2 tablespoons olive oil or coconut cream if preferred
- 1 small celery stalk sliced
- 1 pinch Fresh ground black pepper
- 600 grams Diced fresh raw white fish approximately 500 - 700 grams
- 1 Avocado

Instructions
- Pour lime juice over diced fish. Ensure completely covered and gently stir through.Let stand in fridge overnight or at least 8 hours if preparing during the day.
- Empty half of the lime juice from the bowl.
- Add tomatoes, red onions, celery, capsicum, olive oil, black pepper and cucumber.
- Gently stir through fish.
- Spoon out onto serving plate and garnish with cucumbers, avocado and tomato.
- Serve chilled.
