Ingredients
- 125 grams butter
- 1/3 cup soft brown sugar
- 2/3 cup wholemeal flour
- 1/2 tsp baking powder
- 1 tsp ginger
- 1 tsp grated Kaffir lime rind
- 3 finely chopped Kaffir leaves
- 1 tsp of baking soda dissolved in the juice of 2 small Kaffir Limes
- 2/3 cup coconut
- 1/3 cup finely chopped crystalised ginger
- 1/3 cup chopped salted cashews
- 1/2 tsp salt
- 1 pinch of chilli powder optional

Instructions
- Cream butter and sugar until light and fluffy.
- Add grated Kaffir Lime zest, ginger, salt, baking powder and chilli powder
- Dissolve baking powder in Kaffir Lime juice and add.
- Stir together then stir in flour, cashews, crystalised ginger, chopped Kaffir Leaves and coconut.
- Roll into small balls and place on baking tray. Flatten slightly with the back of a fork.
- Bake in moderate (150 degrees C) for approximately 20 - 25 minutes or until golden brown.
- Take from oven and immediately remove from tray and cool.
