Ingredients
- 5 egg whites
- 1 1/2 cups icing sugar
- 1/2 cup flour
- 1 cup desiccated coconut
- 70 grams ground almonds
- 1 tblsp finely grated lime zest
- 150 grams melted butter

Instructions
- Preheat oven to 165 degrees. Grease a 23cm loose bottom cake tin.
- Beat egg whites in a large bowl until soft peaks form. In a separate bowl, sift icing sugar and flour before adding coconut, almonds and lime zest.
- Fold dry ingredients with melted butter into egg whites. Mix well.
- Cook 30 minutes. Cool on rack.
- Dust with icing sugar and decorate with lime halves and citrus leaves
